Oddie worked at Sears and Roebuck on Lamar Street in Dallas for something around 34 years. She never married but helped raise her seven nieces and nephews. She never drank or smoked. On Sundays she played the piano and organ at Lakewood Methodist Church on Garland Road. Oddie’s Banana Pudding
3/4 c sugar
2 c. evaporated milk + extra milk
3 beaten eggs
cornstarch to thicken (about a T)
stir on stove until thick.
when cooled add bananas and crumbled vanilla wafers.
This is the recipe as she gave it to me. It’s been awhile since I made it, but I believe ‘the extra milk part is really a large can of evaporated milk + enough milk to make 2 cups. I like to eat it still slightly warm because when she made it I never could wait for it to cool completely before digging in!

Oddie’s Salmon Croquettes
small can salmon
2 eggs
2 tsp baking powder
enough flour to make it spoonable
mix together, spoon into hot oil and fry until golden
Yum! I make these pretty often, a taste of childhood!

Haven’t had the salmon croquettes in MANY years … She almost always made macaroni and cheese to go with it. Great childhood memories! Thanks for sharing Kerri!
